Ingredients

4 tablespoons vegetable oil, 2 onions thinly sliced
2 cloves of garlic that have been crushed thoroughly
2cm/1in a piece of freshly-harvested root ginger, cut into smaller pieces
1 tablespoon finely ground turmeric powder
1 teaspoon of red chili powder
1 tablespoon ground coriander
2 . teaspoon cumin seeds ground
100g red lentils, sliced and washed
3 tomatoes finely chopped
1 brinjal, cut into smaller cubes
A substantial amount of vegetable stock based on your preferences, chopped and rinsed
1 red pepper seeded and diced
350g basmati rice
100g French beans, halved
225g cauliflower florets
250g mushrooms, cut into quarters
50g cashew nuts, unsalted, unsalted
Method
The oil is heated in the saucepan (nonsticky pan prefer) Add the diced onions, and fry them slowly for about 2 minutes.
In the garlic, crushed along with ginger, garlic, and other spices. Fry slowly, stirring often for around 1 minute. Be careful to ensure that the garlic and ginger do not remain on the bottom.
